Rayden the Taste Tester

Often, I’ll allow Rayden, my son, sit on the kitchen counter while I am cooking.  He does a very good job at just staying one place.  Once he gets too rambunctious, though, he goes back on the floor and into his play area.  I think the secret to him staying seated in one place is he gets to taste-test all of the ingredients.  He loves it and I do, too.  I’ll often cut off a portion of fruit or vegetable and let him play with it. Avocado is a lot of fun!

His appetite grows more and more everyday.  Sometimes I find myself not being able to cut vegetables fast enough. While Cooking with RaydenI am prepping food on the cutting board his little fingers will get into the mixing bowl and he will start eating everything! Makes me laugh so much!  Maybe this could be a food eating competition show, “Kitchen Wars: Baby VS Mommy” or something like that. Anyways, this salad is refreshing and a perfect salad to share with your loved ones.  Even the mix of colors are pleasant with healing greens, pops of berry colors, and sprinkles of white.

Dressed Cucumber and Tomato Medley

Ingredient List

1-2 sliced Cucumbers
1 cup of  various Tomatoes cut in half
Grated Parmesan Cheese
Extra Virgin Olive Oil
Dried Basil
Salt and Pepper
Lemon Juice
Red Wine Vinegar

Slice CUCUMBERS and TOMATOES and place in a mixing bowl

  • Take out another mixing bowl and fill with 1 part RED WINE VINEGAR, 2 parts EXTRA VIRGIN OLIVE OIL, a squeeze of LEMON juice, and a dash of DRIED BASIL, SALT and PEPPER
  • Mix well and pour the dressing on top of the cucumbers and tomatoes
  • Serve and cover with as much grated PARMESAN CHEESE as you like!
