A Quick, Healthy, and Delicious Dish for When You’re Not in the Mood to Cook (Butter Salmon with Seasoned Snow Peas and Cherry Tomatoes)

About 5-6 days out of the week I cook breakfast, lunch, and dinner for my family.  We eat out and do delivery about once or twice a week.  Although I do love to cook there are days when I am not in the mood to cook for more than 10 minutes.  However, just because I am not in the mood to cook doesn’t mean the rest of the family doesn’t want to eat something delicious. So, what do I do?  Do I tell everyone to go fend for themselves? Well,  I guess I could, but I can’t help it and still want them to eat well.   That’s when I like to make this dish: Butter Salmon with Seasoned Snow Peas and Cherry Tomatoes. It’s a beautiful dish full of flavor, texture, and color that is both satisfying and easy-to-make.


Butter Salmon with Seasoned Snow Peas and Cherry Tomatoes
Ingredient List
Salmon
4 tablespoons of Unsalted Butter
Snow Peas
Cherry Tomatoes
  Dried Basil
  Salt and Pepper
  Dried Parsley
  Extra Virgin Olive Oil
  3-4 chopped Garlic Cloves

Simply bake salmon fillets at 400° Fahrenheit for 15-18 minutes (or until the salmon can be easily flaked with a fork):

  • If you have a super-wave oven you can put FROZEN salmon fillets at 350° Fahrenheit for 10 minutes

While the salmon filet is baking take out a flat pan and bring it to a high heat:

  • Then add in UNSALTED BUTTER and let it melt until it covers the bottom of the pan
  • Lower the heat to medium high and gently put in SNOW PEAS and CHERRY TOMATOES
  • Gently stir the snow peas and tomatoes in the pan until they are covered with butter
  • Then add DRIED BASIL, DRIED PARSLEY, GARLIC CLOVES, EXTRA VIRGIN OLIVE OIL, and SALT and PEPPER to taste
  • Gently stir all of the herbs around so they evenly coat the snow peas and cherry tomatoes
  • Let all the ingredients sit in the pan for about another minute, or until the garlic has softened

Then plate the snows peas and cherry tomatoes and place the salmon fillets right on top.  All done! Time to eat. No fuss and that was easy. Yay!
