This breakfast may not be everyone’s cup of tea, but I love it! I love eggs, smoked salmon, and avocado. Put them together and what do you get? Bibbity-bobbity, bibbity-bobbity, bibbity-bobbity – a large savory breakfast. It’s satiating, comforting, salty, creamy, and makes you happy. I do go a little overboard with the eggs because I love them. So, the 4 eggs is not a typo. I really do use 4 eggs to make this large open-faced omelette.
Fried Eggs with Smoked Salmon and Avocado |

Extra Virgin Olive Oil |
Dried Dill |
Dried Parsley |
Half Avocado |
Now here’s how to make this simple dish. Take out a mixing bowl and crack 4 EGGS:
- Whisk the whites and yolks together
- Drop in cuts of SMOKED SALMON and gently mix around until the salmon is coated with the eggs
- Sprinkle as much DRIED DILL, DRIED PARSLEY, and PEPPER as you like
- Then mix all the ingredients together
- I refrain from adding salt in this dish since the smoked salmon I purchase is already salty
Bring a flat pan, or skillet, to medium heat:
- Coat the bottom of the pan with EXTRA VIRGIN OLIVE OIL
- Gently pour in the egg and salmon mixture
- Move the pan around to make sure the mixture spreads evenly to make a circle
- Let the eggs cook for about 2-3 minutes
- If you don’t like any runny egg, or want to make sure that all of the egg is cooked, use a fork or spoon to gently make little pockets for the runny egg to fall into and cook thoroughly on the hot pan
Then use a large spatula to gently lift the egg off of the pan and slide onto a plate:
- Cover with slices of AVOCADO
