3 Cheese and Vegetable Pizza

Ingredient List
6-8 Cherry Tomatoes sliced in half
Extra Virgin Olive Oil – Drizzle by hand
Simple Bread with Herbs*
Mozzarella – sprinkle over by hand
¼ Onion chopped
Parmesan Cheese – sprinkle by hand
5 ounces of Ricotta Cheese
Salt and Pepper
Slow Roasted Garlic
1 Zucchini slivered

This pizza is easy to make and even more fun to make with your kid(s) or friend(s).

First, start by prepping the toppings:

  • Slice CHERRY TOMATOES in half and place aside
  • Chop ¼ of an ONION, which can be red, white, or yellow (your preference) and set aside
  • Take SLOW ROASTED GARLIC out of the garlic shell, leave whole and set aside
    • To make this at home you only need to slice off the tops of the garlic bulbs, drizzle extra virgin olive oil on top, place on a baking tray, cover the garlic and tray with a sheet of aluminum foil and let them roast in an oven at 400°F for 45 minutes
  • Take 1 ZUCCHINI and slice into thin slivers, or use a vegetable peeler
    • I use a vegetable peeler since my knife skills aren’t the best and the peeler is easier to use

Now that the toppings are prepped it’s time to move on to prepping the pizza crust:

  • Using a rolling pin, or unopened wine bottle, roll out pizza dough on a well-floured surface into a circle or rectangle that is about ½ – 1 inch thick
  • Place parchment paper onto the baking tray or drizzle EXTRA VIRGIN OLIVE OIL over the baking tray and spread it out using your hands, spatula, or brush
    • I just use my hands because it’s faster and I coat the oil around more evenly. It takes 2 seconds to wash the oil off under water and with some soap
  • Place the pizza crust on the baking tray
    • If you’re toppings are going to be heavy handed I would go with the thicker crust so when the dough bakes it doesn’t come out soggy where the toppings are laid

I use it to make pizzas/flat breads, rolls, sandwich breads, and even crackers (if I overcook it – ha!).  I call it SIMPLE BREAD because you can make it in a couple of hours and for most of the time you’re just waiting for it to rise.

  • Smear RICOTTA CHEESE evenly over the pizza crust
  • Then add CHERRY TOMATOES, SLIVERED ZUCCHINI, ROASTED GARLIC, and ONIONS
    • To make this pizza whimsical I took the SLIVERED ZUCCHINI and rolled them up
  • Cover with grated MOZZARELLA CHEESE, EXTRA VIRGIN OLIVE OIL, and SALT AND PEPPER

Finally, bake it:

  • Set the oven for 400°F and let the pizza bake for 12-18 minutes
