Kale is one of those super foods and super greens that I often find people either like or they don’t. It is very polar. I enjoy kale as long as it is cooked well and not left raw. So, when I heard about baking kale to the point of crispy and chip-like it intrigued me. The first time I had home-made kale chips was when I was living in Yokota Air Force Base, Japan and hosting a social event/meeting for the Mrs. Sakura Organization (https://www.mrssakuraorganization.com/). In 2014-2015 I was on the Executive Board as President and we would host monthly social gatherings. We always had food, beverages, and a theme to the socials. The idea was to make sure these gatherings weren’t all business and would be inviting for those who just wanted to socialize and have a good time. This strategy had raised our attendance from 5-8 people from previous years to 30-35 people.
One of our members brought kale chips. They were delicious! No, they didn’t taste like potatoes, but they were satisfyingly crispy, plenty of salt to be addicting, and they were very easy to make. What could be better? How about adding more delicious flavors using different oils, herbs, and spices? These two seasonings are my “go-to” since I always have these oils, herbs, and spices in the cupboard.
To begin, take a bundle, or two, of kale and thoroughly rinse them under warm water and massage the leaves with your fingertips. Massaging the kale will make them tenderer and easy to bite through.
- Pat the kale dry using a paper towel
- Then take a kitchen knife and separate the leaves from the thick stem
- Chop, or tear, the leaves to bite-size portions and place them in a large mixing bowl
- Pick one of the two seasonings above and gently cover and mix the ingredients to your preference
- I am purposely avoiding giving measurements, such as 1 tablespoon of granulated garlic because I find that everyone has their own preference to the amount of these herbs and spices
- Place the pieces of kale on parchment paper
- Bake at 350° F for 15 minutes and then flip the kale chips and bake for another 10-15 minutes
Learn from my mistakes! Here are a couple of tips to make your first batch of kale chips come out tasty, crispy, and delicious.
- Tip 1 – The oils should gently coat the kale leaves. Do not saturate the kale chips with oil or they will come out very soggy, or too greasy, rather than crispy
- Tip 2 – Keep the kale chips separated from each other when you bake them. One time I just placed a bundle of kale on top of each other and once they were baked they were warm, delicious, but NOT crispy.
