8 – 10 Red Potatoes |
2 Leeks |
3-4 Garlic Cloves |
Salt |
Extra Virgin Olive Oil |
3-4 tablespoons Unsalted Butter |
Slivered Almonds |
To prepare the potatoes:
- Slice the RED POTATOES
- Take a pot and fill it up with water a little more than halfway and bring to a boil
- Then put in the new potatoes and lower the heat to medium
- Let the potatoes soften for 10-12 minutes
- This step is done to assure the potatoes will be fully cooked and soft in the center before serving
While the potatoes soften in the pot:
- Setup UNSALTED BUTTER, SLIVERED ALMONDS, slice GARLIC CLOVES into slivers, and chop LEEKS
Once the red potatoes are done drain the water out using a colander.
- Take a saute pan, or skillet, and bring to a high heat and add the butter
- Lower the heat to medium high and drop in the garlic cloves, leeks, and slivered almonds
- Let the butter completely melt and mix the ingredients around
- Once the garlic has cooked (1-2 minutes) transfer the ingredients into a mixing bowl and put the saute pan back on the stove
- Then lay the red potatoes and let them get a little brown or crispy on the edges (about 4-5 minutes)
- If the saute pan is not greased enough add some EXTRA VIRGIN OLIVE OIL
- Turn off the heat and taste test to see how much SALT to add
- Place potatoes into a serving plate and then place the ingredients in the mixing bowl on top
