|A handful of slivered and Roasted Almonds|
|1 tablespoon of Balsamic Vinaigrette|
|¼ cup of Blueberries|
|¼ cup of crumbled Feta Cheese|
|1-2 tablespoons of Grapeseed Oil|
|1-2 heads of Romaine Lettuce|
|¼ cup of sliced Strawberries|
|¼ cup of crumbled Walnuts|
My top favorite fast-food chains are Taco Bell and Wendy’s. My sister and I were practically raised on Taco Bell for dinner for 3 nights a week or so when we were younger. After school we had extra circular activities. Mondays were karate (Goju Ryu), Tuesdays were gymnastics and dance, Wednesdays were karate or tennis (depending on the season), Thursdays were computer classes (how to use software, typing on the keyboard, and navigating search engines), Fridays were private lessons in karate, and Saturdays were horseback riding or acting classes. While some people can’t handle Taco Bell’s re-fried beans and high sodium content, my sister and I are good. It is all about the bean and cheese burritos with onions, red sauce, and lettuce (yep – you have to ask for that, but the texture of the lettuce does make the burrito better).
Then there’s Wendy’s. While my sister and I did enjoy Taco Bell growing up all the other fast food chains were off limits. McDonald’s ice cream and fries were only in reach if we were road tripping. Sonic was introduced to me in high school because the high school dance team I was on would do fundraisers there. Sonic’s tator tots are my favorite menu item. In my early 20’s, I was finally introduced to Chick-Fil-A when I met my sister-in-law at a mall just to hang out and do some shopping. I finally had a Burger King Whopper once I lived at Yokota AB, Japan in 2013 and my husband, Jeff, was on TDY (remote mission). Till this day, I have never eaten at Whataburger or Popeye’s. If I did…I don’t remember. Any ways, then there is Wendy’s.
I remember once I started college, working, and driving at 18 years old it occurred to me that I could get a Wendy’s frosty and fries and there was no one to stop me. Thus began my love and hate relationship with Wendy’s. You can learn more about that from my previous Confessions blog: Eating Obsessed – From Unhealthy to Recovery. I am recovered now and can eat at Wendy’s just fine. Once they started making salads it was interesting to see the varieties. When strawberries were in season they were making salads with strawberries and strawberry dressing. I’ve never tried any of them so I can’t tell you if they are good. However, Wendy’s menu did inspire me to make my own salad with berries and nuts at home. This salad is light, not overwhelmingly sweet, and the feta cheese and walnuts work really well with the blueberries and strawberries. This salad will make you feel good and has way less refined sugar.
Begin by chopping ROMAINE LETTUCE into bite size pieces and remove the stalk
- Put into a mixing bowl
- Add BLUEBERRIES, STRAWBERRIES, ALMONDS, WALNUTS, and FETA CHEESE
- Drizzle BALSAMIC VINAIGRETTE and GRAPE-SEED OIL and mix all the ingredients together
- Grape-seed oil is very neutral in flavor and a source of Vitamin E
- It will also not overwhelm the sweet and satiating flavors of the fruits and nuts in this dish
