Tofu Scramble with Sautéed Vegetables |
Ingredient List |
¼ cup of Black Beans |
½ a block of Firm or Extra Firm Tofu |
½ Onion diced |
1 teaspoon of Tarragon |
1 teaspoon of Turmeric |
2 Red Potatoes diced |
Extra Virgin Olive Oil |
Handful of Baby Spinach |
Nutritional Yeast (optional) |
Salt and Pepper |
Vegans and lacto-vegetarians will often substitute tofu for eggs. I think this meal is good to enjoy every now and then. It is easy-to-make, takes about 10 minutes, tasty, and gives your stomach a nice “break” from digesting harder ingredients like meats, dairy, and eggs. There are spices and herbs to add color, flavor, and more nutrients to your body. My Tofu Scramble and Sauteed Vegetables will leave you feeling good, light, and awake.
To make this dish begin by preparing the vegetables:
- Rinse and drain BLACK BEANS and put them in a mixing bowl
- Add a BABY SPINACH, ONION, and RED POTATOES
- Drizzle EXTRA VIRGIN OLIVE OIL on top
- Mix ingredients
In a separate mixing bowl:
- Add TOFU and break apart with your fingers to create a scramble egg-like consistency
- Cover with TURMERIC and TARRAGON and use a spoon to gently mix ingredients
- I recommend using a spoon because turmeric will stain your fingers
Bring a skillet, or flat pan, to medium high heat:
- Add in the mixed vegetables and let them saute until the onions become translucent
- Stir occasionally so the ingredients cook evenly and avoid burning
- Lower the heat to medium if you feel the skillet is getting too hot
- Then add in the bowl of tofu
- Add SALT and PEPPER to taste
- Mix ingredients again
Serve immediately and enjoy!
Optional: Add NUTRITIONAL YEAST on top more nutrients and flavor by sprinkling
